MINESTRONE FOR TWO
2 Tsp virgin olive oil
1/2 small brown onion (chopped finely)
1 clove garlic, crushed
2 tsp finely chopped rosemary leaves
1 small carrot (chopped finely)
1 trimmed celery stalk (chopped finely)
400 g canned diced tomatoes
500ml beef stock
1 tsp caster sugar
150g small beef ravioli
2 tblsp shaved Parmesan
1 tblsp fresh parsley leaves
Heat the oil in a medium saucepan over medium heat. Cook the onion, garlic, rosemary, carrot and celery for 5 minutes or until softened. Add the tomatoes, stock and sugar, season. Bring to the boil; cook for 5 minutes, add ravioli to the pan, cook, stirring for 5 minutes or until ravioli is tender. Divide soup and ravioli between bowls. Top with Parmesan and parsley; accompany with crusty bead. Suitable to freeze. ENJOY!
RASPBERRY AND PISTACHIO YOGHURT CAKE
185g butter (softened)
1tsp finely grated lemon rind
2 eggs
1 1/2 cups self-raising flour
1/3 cup almond meal
1/2 cup pistachios, blanched, peeled
125g fresh raspberries
2 tsp icing sugar
Preheat oven to 180C. Grease a deep 20cm round cake pan; line base and side with 2 layers baking paper. Beat butter, rind and caster sugar in a medium bowl until light and fluffy. Beat in eggs 1 at a time, fold in sifted flour and almond meal, then yogurt and pistachios. Spoon half the mixture into pan, top with third of the raspberries. Spread with remaining mixture, place another third of the raspberries on top, pushing them into batter, top with remaining raspberries.
Bake cake for 50 minutes or until a skewer inserted into the centre comes out clean. Leave cake in pan for 10 minutes before turning, top side up, onto a wire rack to cool. Just before serving sprinkle with icing sugar. ENJOY!
